Description
1.- Obtaining and characterization of bioactive compounds, their protection through the use of dispersed systems (multiple emulsions, microencapsulated and biopolymeric coatings based on dispersed systems) and the formation of intermolecular electrostatic complexes. In particular, emphasis is placed on the structure and properties of the interfacial films formed and their effect on the physicochemical and functional properties of the dispersed systems.
