La Doctora Isabel Guerrero Legarreta es Ingeniero Químico por la Facultad de Química de la Universidad Nacional Autónoma de México (UNAM), Maestra en Ciencias (M.Sc.) en Ciencia de los Alimentos por la Universidad de Reading, Inglaterra, y Doctora (Ph.D.) en Ciencia de los Alimentos por la Universidad de Guelph, Canadá. Es profesora de la Universidad Autónoma Metropolitana (UAM), Unidad Iztapalapa, desde 1984.

Sus actividades de docencia e investigación se centran en desarrollo y conservación de alimentos de origen muscular –terrestres y marinos-, principios activos de origen animal, incluyendo subproductos de posible utilización industrial, y mecanismos de deterioro de alimentos.

Ha dirigido cuatro tesis de licenciatura, tres de especialización y 38 proyectos terminales de licenciatura; ha formado a 21 doctores y 14 maestros en ciencias. Ha publicado 30 artículos de difusión, 110 artículos de investigación, 85 capítulos de libro y compilado 16 libros. Es investigadora nacional nivel 3 y Profesora Emérita y Distinguida de la Universidad Autónoma Metropolitana.
