Profile

Dr. Rosy G. Cruz Monterrosa is a Zootechnician Veterinary Doctor from the Autonomous University of Tlaxcala, Master of Science in Genetic Resources and Productivity from the Postgraduate College, and Doctor of Science in Biotechnology from the Universidad Autónoma Metropolitana.

Her professional preparation has been given with different research projects related to the use of in vitro, in situ, and in vivo techniques linked to the physiology and evaluation of food, using experimental models in ruminants, and incorporating the line of research in deficiency and selenium supplement. Another line of research is the problem of yellow fat caused by beta-carotene pigmentation in cattle raised in the tropics. Among the main results obtained was published the antagonistic effect of pectin on inhibiting intestinal absorption of carotenoid pigments. The results have improved the quality of the carcass, the meat, and the shelf life of cattle finished in grazing. Her research line is developed in food quality and safety, incorporating sustainable food systems.

Her academic distinctions include the best grade in her class during her undergraduate studies, and she earned the Medal of Academic Merit for her Ph.D. studies. She is currently a National Researcher Level 1 of the National System of Researchers. Her academic activity has been carried out for eight years as a full-time research professor in the Department of Food Sciences. She served as head of the same from 2016 to 2020 and currently works as Coordinator of Academic Liaison at the Lerma Campus of the Universidad Autónoma Metropolitana.
