Profile
Dr. Álvarez Cisneros is a food engineer from the Interdisciplinary Professional Unit of Biotechnology (UPIBI) of the National Polytechnic Institute and obtained her master's and doctoral degrees in biotechnology from the Autonomous Metropolitan University, Iztapalapa Unit.
Since 2017, she has been affiliated with the Macromolecular Biochemistry group in the Biotechnology Department of the Autonomous Metropolitan University, Iztapalapa Unit, as a Full-Time Associate Professor "D". She holds the recognition as a National Researcher Level I from the National System of Researchers (SNI), as well as the PRODEP profile.
He has participated in the supervision and advising of undergraduate, specialty, master's, and doctoral theses, as well as the delivery of more than 50 teaching and learning units (TLUs) in undergraduate and graduate programs in the Department of Biotechnology. Additionally, he has published five textbooks to support teaching courses.
His main research focus is the biochemical, bioactive, molecular, and techno-functional characterization of biomolecules with eubiotic potential extracted from insects. The results have been presented at various national and international scientific forums; moreover, scientific articles have been published in JCR and Scopus Q1 and Q2 journals, as well as dissemination articles and book chapters, as corresponding or lead author. Additionally, there are ongoing projects focused on the development of functional and high-value-added foods.
He has also participated in the peer review of national and international journals and has been responsible for the project funded by the 2019 Special Research Support Program “Assessment of the Eubiotic Capacity of Biomolecules Extracted from Endemic Insects of Mexico.” A specific research project agreement was signed with the Institute of Chemistry and the Institute of Applied Sciences and Technology (ICAT), both of UNAM. An Honorable Mention was received in the field of food engineering at the AMIDIQ 2025 congress, and Third Place was awarded in Area III: Sustainable Food Process and Novel Technologies, of the Mexican Association of Food Science Latin Food 2025.
Dr. Álvarez has held various management and university participation positions, including: member of the committee responsible for evaluating the synthetic content of the UEA Organic Chemistry (2017-2020); principal representative of the academic staff of the Department of Biotechnology on the Divisional Council (2018-2019); alternate representative of the academic staff of the Department of Biotechnology on the Academic Council (2019-2021); member of the Divisional Ethics Committee of DCBS (2019-2021); member of the Divisional Academic Committee for the review of the UEAs of the General Core of DCBS (2019-2020); member of the Departmental Committee of Chemistry, Biochemistry, and Microbiology, Quality and Development, Department of Biotechnology (2019-2020). I am currently a member of the Academic Committee of the Bachelor's Degree in Industrial Biochemical Engineering (from 2024 to present) and Coordinator of the Bachelor's Degree in Industrial Biochemical Engineering (from 2020 to present).
