Profile
Professor Rey Gutiérrez Tolentino obtained a B.S. degree in Animal Production from the Universidad Autónoma Metropolitana (UAM) Iztapalapa Campus in 1995 and a Ph.D. from the UAM Xochimilco Campus in 2004, both in Mexico.
He joined the UAM Xochimilco Campus in 1995, where he is currently Professor; he has a PRODEP profile from the Federal Public Education Secretariat. National Researcher level II of the National System of Researchers of CONACYT and has been a member of the Mexican Academy of Sciences since 2017. Since joining the UAM, he has worked in the Dairy Analysis Laboratory; in 2005, he was appointed head of the Instrumentation Laboratory until 2015, and from 2018 to date, he has been responsible for the Dairy Analysis Laboratory. Also, from 2006 to 2015, he was Head of the Research Area Conservation and Marketing of Agricultural Products and, from 2015 to 2019, Head of the Department of Agricultural and Animal Production.
His line of research covers food quality and safety with emphasis on milk and dairy products and their effect on human nutrition. He mainly studies food-related issues such as nutritional composition, microbiological aspects, chemical residues' presence, functional substances' content, and authenticity. His contributions in this field have allowed him to participate in national standardization organizations such as COFOCALEC and COFEPRIS. He is author and/or co-author of 73 articles in peer-reviewed journals, five books, 20 chapters, and 42 articles. He also has two copyrighted technological developments (a technological platform and a video game on healthy habits and lifestyles). He has taught uninterruptedly since 1997 in the Common Divisional Trunk of Biological and Health Sciences and the postgraduate programs in Biological and Health Sciences (doctorate) and Agricultural Sciences (master's and doctorate) at the Universidad Autónoma Metropolitana Xochimilco Campus. He has presented 283 papers in congresses. Under his direction or consultancy, 15 master's theses and three doctoral theses have been completed.
