Profile

Dr. Jorge Alberto Saltijeral Oaxaca holds a PhD in Epizootiology and Zoohygiene from the University of Veterinary and Pharmaceutical Sciences of Brno, Czech Republic. He earned his Bachelor’s degree in Veterinary Medicine and Animal Science from the National Autonomous University of Mexico (UNAM).

He serves as a Full-Time Research Professor, Level C, in the Department of Agricultural and Animal Production at the Universidad Autónoma Metropolitana, Xochimilco Campus.

He completed visiting professorships at The Ohio State University (1998–1999) and at the Universidad Autónoma de Sinaloa (2015–2016). He has also taught as a guest professor at seven universities in Mexico and seven universities abroad.

His research output includes peer-reviewed publications in national and international journals on milk quality, cryptosporidiosis, biological control of ticks, food safety (Listeria), and veterinary education. He has also coordinated and published several specialized books.

He has supervised 49 undergraduate theses, 4 master’s theses, and 8 doctoral dissertations at various higher education institutions, including UNAM, UAM, and UAEM. He has also served on academic evaluation committees at UNAM.

He has completed 35 professional development courses in China, India, the United States, Israel, Spain, Argentina, Cuba, the Czech Republic, and Mexico, focusing on HACCP, good hygiene practices, food microbiology, milk quality control, veterinary public health, and epidemiology.

He works as a milk quality consultant and has designed and implemented quality assurance programs for public and private companies in the dairy and dairy products sector.

He remains the only Spanish-speaking president of the International Society for Animal Hygiene (2000–2003). He has also received European Union funding, through the Jean Monnet Module, to support research projects in animal hygiene.
