Profile

Dra. Raquel González Vázquez studied Food Chemistry at the Faculty of Chemistry of the UNAM, as a degree project she extracted natural metabolites from endemic plants in Mexico with herbicidal activity from which she generated 3 scientific research articles published in JCR magazines (DOI: 10.1021/jf051897s; DOI: 10.1016/j.abb.2007.05.002 ; https://www.scopus.com/inward/record.uri?eid=2-s2.0-39449120718&partnerID=40&md5=6dc9f5f76773560defbc7777730dc73f ).

She also studied a degree in Biological Pharmacist Chemist at the Universidad Atuonoma Metropolitana, Xochimilco Campus.
Later she entered the Master of Science in Food at the National Polytechnic Institute - National School of Biological Sciences where she developed a project whose objective was to produce the enzyme Naringinase from a fungus that commonly grows in food (Aspergillus Niger). Naringinase is an enzyme of interest to the food industry, particularly the juice industry, since it is responsible for hydrolyzing the flavonoids that give bitterness to citrus fruit juices, so after its enzymatic activity it is expected to obtain citrus juices without bitterness, from this project she obtained a research article published in a JCR magazine.

She completed her PhD studies in Biotechnology at the National Polytechnic Institute - National School of Biological Sciences, from where she obtained three scientific research articles published in JCR journals with impact factor related with isolated bacteria from pulque (http://www.scielo.org.mx/scielo .php? script = sci_arttext & pid = s1665-27382014000100015 & lng = es & nrm = iso>. ISSN 1665-2738; doi: doi 10.1007/S10068-017-0061-Y; DOI: 10.1007/S12602-015-9202-X).

She currently belongs to the National System of Level 1 Researchers.
